- Slice eggplant into thin discs.
- Warm Olive Oil on medium heat.
- Fry eggplant on low-med heat for 2-4 minutes on each side.
- Mix Chreese into 6 TBSP of boiling water (or use 1/4 Cup of pre-made Chreese from food processor).
- Once eggplant is cooked to your satisfaction, line sub roll with layer or two of eggplant pieces.
- Pour tomatoe sauce over eggplant.
- Pour Mozzarella Style Chreese over top of tomatoe sauce in thin, even layer.
- Bake in toaster oven for 4-5 minutes @ 350 degrees or until Chreese begins to bake and tomatoe sauces is warm.
