Grain-Free Chickpea Coconut Granola

This grain-free granola is made with CHICKPEAS!
Chickpeas are a great source of protein and you might just have all these ingredients stocked in your pantry already. ⠀
Let's Do Organic Coconut Flakes perfectly complement the crunchy salty but sweet chickpeas.
Add in nuts, maple syrup, and Native Forest Organic Virgin Coconut Oil and you have yourself an easy grain-free granola!
Perfect for serving with milk, atop smoothie bowls and coconut yogurt, or simply by the handful.⠀
⠀ Ingredients

1 (15)oz can chickpeas, drained and rinsed

1/2 tablespoon Native Forest Organic Coconut Oil (melted)

1 1/2 cups Let's Do Organic Coconut Flakes

3/4 cup slivered almonds
-
1/2 cup raw hulled pumpkin seeds

1 teaspoon cinnamon

1 teaspoon salt
-
1/4 cup maple syrup

3 tablespoons Native Forest Organic Coconut Oil (melted)⠀
⠀ Directions

Preheat the oven to 400 degrees. Spread the chickpeas out on a paper towel or dish cloth and pat dry with another towel.

Place the chickpeas on a parchment lined baking sheet and toss with 1/2 tablespoon coconut oil. Bake for 25 minutes.

Meanwhile, in a large bowl, stir together the coconut flakes, almonds, pumpkin seeds, cinnamon and salt.

Add in the cooked chickpeas, maple, and coconut oil. Toss well and spread back out onto the baking sheet.

Bake for another 15 minutes. Turn off the oven and leave the granola inside, with the door cracked to cool. This helps the granola crisp up.
