Fruity Coconut Chia Seed Pudding Servings: 1 bowl Time: 10 hours Ingredients: • 1/4 cup chia seeds • 1 cup Native Forest® Classic Coconut Milk • 1 tsp vanilla extract • 1/2 tsp ground cinnamon • 1 banana Toppings:Let’s Do Organic® Shredded Coconut • blueberries • sliced banana • passion Fruit • buckwheat • pistachios Directions: 1. In a small bowl, mash a whole banana with a fork until the texture is smooth and there are no lumps. 2. Next, using a sealable container, add the mashed banana, coconut milk, vanilla extract, and ground cinnamon. 3. Finally, slowly stir in the chia seeds and ensure all the seeds are fully submerged. Cover the container and refrigerate overnight, or a minimum of 5 hours. 4. When the the mixture has formed a pudding, add to a bowl and garnish with toppings of your choice. The bowl pictured is decorated with shredded coconut, blueberries, sliced banana, passion fruit, buckwheat, & pistachios.
