If you love all things funfetti, you will LOVE this Vegan Funfetti Cake!

This vanilla loaf cake is made totally vegan & gluten-free and made with better-for-you ingredients.

We use Let’s Do Organic Creamed Coconut instead of butter or oil, making this healthier than your traditional cake!

Start by whisking together applesauce, sugar, creamed coconut, almond milk, vanilla, and apple cider vinegar.

Next, add in the gluten free flour and coconut flour, baking powder, and salt.

A funfetti cake wouldn't be complete without a TON of sprinkles!

Fold in a generous amount of sprinkles to the batter.

Pour the batter into a loaf pan lined with parchment or sprayed with nonstick spray and smooth the top. Then bake!

While the cake is cooling, making your glaze by whisking together powdered sugar, almond milk and vanilla.

Glaze the cooled cake, slice, serve and celebrate!

  Ingredients: Funfetti Loaf Cake
  • 3/4 cup (180g) applesauce
  • 3/4 cup (135g) cane sugar
  • 1/2 cup (130g) Let’s Do Organic Creamed Coconut
  • 3/4 cup (180g) almond milk
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar
  • 1 1/2 cups (185g) gluten-free flour
  • 2 tbsp (15g) Let's Do Organic Coconut Flour
  • 2 tsps baking powder
  • 1/2 tsp salt
  • 1/2 cup (80g) rainbow sprinkles
Glaze
  • 1 1/2 cups (180g) powdered sugar
  • 2-3 tbsp almond milk½ tsp vanilla extract
Instructions:
  1. Preheat the oven to 350°F.
  2. Whisk together applesauce, sugar, creamed coconut, almond milk, vanilla, and apple cider vinegar (all at room temperature or slightly warmed).
  3. Add the flours, baking powder, and salt. Whisk to combine.
  4. Fold in the rainbow sprinkles.
  5. Pour into a 8x4” loaf pan (lined with parchment or sprayed with nonstick spray) and smooth the top.
  6. Bake 50-55 minutes at 350°F.
  7. Cool for 15 minutes in the pan, then transfer to a cooling rack to cool completely before glazing.
  8. Whisk together glaze ingredients until smooth and thick.
  9. Glaze the cooled cake, slice, and serve.
  10. Enjoy!
