This recipe super easy to make, a little chopping, no cooking, and leans heavily on the impeccably seasoned Native Forest Organic Yellow Curry Jackfruit.
All it takes is a scoop of vegan mayo, and the salad is studded with diced apple for a delightful contrasting sweet crunch!
Yellow Curry Jackfruit “Chicken” Salad Sandwiches

Ingredients:
Yellow Curry Jackfruit “Chicken” Salad:
- 1 can Native Forest Yellow Curry Organic Young Jackfruit
- 1/2 cup finely diced apple
- 1/2 cup finely chopped celery
- 1/2 cup thinly sliced green onion
- 1/2 cup chopped toasted almonds
- 1/4 cup vegan mayo
- 1 tbsp lemon juice
- 1/4 tsp turmeric
- Salt + pepper to taste
Everything Else:
- 6 rolls or baguette cut into 4-inch sections
- Sliced Tomato
- Baby Arugula
Directions:
- Open the can of jackfruit and transfer it to a large mixing bowl, including all sauce. Shred the jackfruit between two forks to make bite sized pieces and smaller.
- Add the apple, celery, green onion, almonds, mayo, lemon juice, and turmeric to the jackfruit and stir to combine. Add salt and pepper to taste and adjust any other seasoning if necessary. Refrigerate until ready to assemble sandwiches.
- Slice the bread down the center lengthwise. Add sliced tomato and baby arugula, then spoon in the jackfruit salad. Serve with hot sauce if you like a kick.
