- Preheat oven to 350º.
- Grease & flour a 9 inch baking pan.
- In small saucepan, combine coconut milk and water and bring to a boil.
- Remove from heat and stir in oats.
- In a separate bowl, combine flour, baking powder and salt.
- In large mixer bowl, beat butter and sugar until fluffy.
- Add eggs and vanilla; beat well.
- Stir oat mixture into butter/egg mixture and then add dry ingredients.
- Put into baking pan and bake 30 minutes.
- Meanwhile, combine all topping ingredients.
- Remove the cake & spoon topping onto it.
- Return to oven and brown 3-4 minutes.

½ cup butter or buttery spread, softened
¾ cup Sugar
2 eggs or egg substitute
1 tsp Vanilla Extract

2/3 cup Pecans, chopped
