Coconut Oat Coffee Cake CAKE ½ cup Native Forest® Organic Coconut Milk Classic 1/3 cup Water 1 2/3 cups Quick-cooking Oats 1 1/3 cups Flour, unsifted 2 tsp Baking Powder ¼ tsp Salt ½ cup butter or buttery spread, softened ¾ cup Sugar 2 eggs or egg substitute 1 tsp Vanilla Extract TOPPING Remainder of can Native Forest® Organic Coconut Milk Classic 2/3 cup Oats 1 tsp Vanilla 2/3 cup Let’s Do…Organic® Shredded Coconut 2/3 cup Pecans, chopped
  • Preheat oven to 350º.
  • Grease & flour a 9 inch baking pan.
  • In small saucepan, combine coconut milk and water and bring to a boil.
  • Remove from heat and stir in oats.
  • In a separate bowl, combine flour, baking powder and salt.
  • In large mixer bowl, beat butter and sugar until fluffy.
  • Add eggs and vanilla; beat well.
  • Stir oat mixture into butter/egg mixture and then add dry ingredients.
  • Put into baking pan and bake 30 minutes.
  • Meanwhile, combine all topping ingredients.
  • Remove the cake & spoon topping onto it.
  • Return to oven and brown 3-4 minutes.
