Ingredients:

Muffins:
½ cup coconut sugar
½ cup applesauce 
½ cup non-dairy milk
¼ cup melted coconut oil
1 ½ tsp apple cider vinegar
1 tsp vanilla
2 cups oat flour
1 ½ tsp cinnamon
1 tsp baking powder + baking soda
½ tsp nutmeg
¼ tsp salt
1 cup freshly grated carrots

Frosting:
4 oz vegan cream cheese
1 cup vegan yogurt
2 tbsp maple syrup
½ tsp vanilla

Decorations:
12 marshmallows, cut in half
beet powder or freeze-dried strawberry powder

Instructions:
Preheat the oven to 350°F and line a muffin pan with parchment liners.

Mix together the coconut sugar, applesauce, non-dairy milk, melted coconut oil, apple cider vinegar, and vanilla. Stir in the oat flour, cinnamon, baking powder, baking soda, nutmeg, and salt. Stir until just combined. Gently fold in the freshly grated carrots.

Add the batter to the muffin pan and bake for 18–20 minutes, until a toothpick comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Add the cream cheese, yogurt, maple syrup, and vanilla to a bowl and use a hand mixer to beat until smooth and creamy. Frost the muffins, sprinkle with shredded coconut, and decorate with the marshmallow bunny ears. Enjoy!
