Brighten up your day with these adorable easter cookies that are both vegan and gluten-free.
These cookies come together with an adorable easy glazed icing with bright color sprinkles. Glazed Easter Sugar Cookies (Vegan & Gluten-Free) Ingredients

1/2 cup Native Forest Organic Coconut Oil

3/4 cup organic sugar

1/2 cup dairy-free vanilla yogurt

1/2 cup maple syrup
-
1 teaspoon vanilla extract

2 1/2 cups almond flour
-
2 cups Let's Do Organic Cassava Flour

1 1/2 teaspoon baking powder
-
1 teaspoon xanthan gum

1/2 teaspoon salt

6 tablespoons Let's Do Organic Heavy Coconut Cream

1 1/2 cups powdered sugarNatural food coloring

Sprinkles or sparkling sugar
Directions

Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.

Mix together the coconut oil and sugar until light and fluffy.

Mix in the yogurt, maple syrup, and vanilla extract.

Add in the almond flour, cassava flour, baking powder, xanthan gum, and salt. Mix until a dough forms.

Take a tablespoon of the dough and roll it into a ball. Place it on the prepared cookie sheet and use your hand to press down on the ball until it is an even oval shape. Repeat with the remaining cookies. Bake for 12 minutes.

Once the cookies are cool, add the frosting ingredients into the mixer bowl and mix on low until the powdered sugar is incorporated. Increase the speed and beat until the frosting is light and fluffy. Use as is, or add coloring!

Use a spoon to spread on a dollop of frosting onto each cookie. Top with sanding sugar or sprinkles. Enjoy!
