✨Dough
1 cup almond flour (100g)
1/2 cup oat flour (45g)
2 tbsp vegan vanilla protein powder
1/4 cup Native Forest Organic Simple Coconut Cream*
3 tbsp maple syrup
1/4 tsp cinnamon
1/2 tsp vanilla extract
1/8 tsp salt
✨Filling
2/3 cup medjool dates (125g or about 10 dates)
40g pecans
1 tbsp Native Forest Organic Simple Coconut Cream*
1/2 tbsp cinnamon
pinch of nutmeg
1/2 tsp vanilla
a big pinch of salt
✨Notes
*Chill the can of coconut cream overnight. In the morning, scoop out the solid part at the top. Before adding to the recipe, soften the coconut cream in the microwave for 15-20 seconds.
✨Directions
Start by cutting each date and removing the pits. Add the dates and pecans to a heat-safe dish and cover them in boiling water for around 30 minutes, so they can soften.
In a clean bowl, add all of the dough ingredients and mix. Then transfer the dough to a piece of parchment paper and, using a rolling pin, roll it into a rectangle a few millimeters thick. If the dough is too sticky, add small amounts of oat flour, or refrigerate the dough for about 20-30 minutes so it can harden.
Drain the dates and pecans from the water & add them to a food processor, then add the rest of the filling ingredients & pulse until you get a creamy texture.
Spread the date filling evenly on top of the dough and gently start rolling.
At this point, you can slice the rolls and enjoy, but I like to wrap my giant roll and refrigerate it for 30 minutes so that the dough can harden and the rolls form nicer swirls when cutting.
I then like to use a piece of (unscented) dental floss to slice the rolls into evenly sized pieces. Enjoy!
