Hearts of Palm Green Goddess Chopped Salad

If you’re in a salad rut, this one will pull you out of it fast. Inspired by the viral green goddess chopped salad, this salad is crisp, herby, a little creamy, and packed with texture in every bite. The star here is Native Forest Organic Hearts of Palm, which brings that slightly briny, artichoke-like flavor that makes this feel a little more special than your usual chopped salad.

It comes together with hearts of palm, cucumbers, snap peas, edamame,  green onionsand pumpkin seeds and is loaded with creamy, vibrant vegan green goddess is made with avocado, cilantro, lime, ginger, and garlic.

 This salad is perfect for spring and summer hosting, and can be served as a dip with chips or as a chopped salad on the side!

  • Hearts of Palm Green Goddess Chopped Salad Recipe

    Serves: 4–6
    Prep Time: 15 minutes

    Ingredients

    Salad

    • 1 (15 oz) can Native Forest Organic Hearts of Palm, finely chopped
    • 4 Persian cucumbers, finely chopped
    • 8 oz sugar snap peas, finely chopped
    • 1½ cups frozen shelled edamame, thawed
    • 4 green onions, finely chopped
    • ½ cup roasted salted pumpkin seeds

    Green Goddess Dressing

    • 1 avocado
    • 1-inch piece fresh ginger
    • 1 garlic clove
    • Juice of 1 large lime
    • 1 cup fresh cilantro
    • 1 tbsp maple syrup
    • ½ jalapeño, seeds removed (optional)
    • ½ tsp sea salt
    • ¼–½ cup water (adjust for desired consistency)

    Instructions

    1. Prepare the salad:
      Add the chopped hearts of palm, cucumbers, sugar snap peas, edamame, green onions, and pumpkin seeds to a large bowl.
    2. Make the dressing:
      In a high-speed blender, combine the avocado, ginger, garlic, lime juice, cilantro, maple syrup, jalapeño (if using), salt, and ¼ cup water. Blend until smooth and creamy. Add more water as needed to reach your desired consistency.
    3. Combine:
      Pour the dressing over the salad and toss until everything is well coated.
    4. Season and serve:
      Taste and adjust with additional salt and pepper if needed. Serve immediately or chill until ready to enjoy.

    Tip: For best texture, keep everything finely chopped so you get a little bit of everything in each bite.
