Vegan Lemon Poppy Seed Protein Bites

These protein bites taste just like a lemon poppy seed muffin but involve zero cooking!
All you need is a bowl and a few healthy and simple ingredients!
This makes for the perfect pre or post workout snack as it's loaded with plant-based protein!

Ingredients:- 1 1/4 cup almond flour
- 1/2 cup Let's Do Organic Coconut Flour
- 2 scoops (46g) vanilla protein powder
- 1/4 cup Native Forest Organic Virgin Coconut Oil (melted)
- 1/4 cup maple syrup
- 2 tbsp cashew butter or nut butter of choice
- 2-3 tbsp non-dairy milk (as needed)
- juice of 1 large lemon or 2 small lemons + lemon zest
- 1 tbsp poppy seeds
- In a medium bowl, combine maple syrup, melted coconut oil, cashew butter and lemon juice.
- Then add in almond flour, coconut flour, and vanilla protein powder.
- Whisk together until a thick batter forms.
- Add in 1 tbsp of non-dairy milk at at time, until you reach the desired consistency, not too wet or not too dry and able to mold into bite size balls. Then fold in the poppy seeds.
- Use your hands or a mini cookie scoop to roll into balls.
- Then freeze for a few hours until they are firm.
