Snacking Squirrel Blog has published a great recipe (attributed to Love Veggies and Yoga) using our Miso-Cup® Instant Soup Mix:
Cheezy Vegan Vegetable Bake- A gigantic bowl of mixed vegetables: Broccoli, Kale, Rainbow Chard, Leeks, Red Peppers, and Red Onion
- 2 Diced Potatoes, Frozen Corn, Edamame, Beets, Carrots, and Frozen Cut Green Beans
- 1 packet (prepared) Reduced Sodium Miso-Cup® Instant Soup Mix
- Combine everything together in a glass baking dish
- For the "Cheezy" aspect of the recipe, I added 1/4 cup of Nooch (Nutritional Yeast) to the prepared Miso Soup
- Also added to Miso soup: Stirred together extra spices, herbs, and seasonings: Parsley Flakes, Bouquet Garni Spice Blend, Dill, Paprika, Cumin, Garlic Powder, Onion Powder, Mustard Powder, and Cayenne Pepper
- Pour the soupy mixture over the vegetables
- Preheat oven to 400 Fahrenheit, bake for 50 min.
