Palm Heart Artichoke Sandwich

These sandwiches are kid-approved and perfect for a back to school lunch or a weeknight dinner!

Hearts of Palm Artichoke Sandwich with Lemon Aioli Yields: 5 cakes
  • ½ cup minced onion
  • 2 minced garlic cloves
  • 1 14 oz. can Native Forest Organic Hearts of Palm drained, patted dry & chopped coarsely
  • 1 6 oz. jar Native Forest Marinated Artichoke Hearts, drained, patted dry & chopped coarsely
  • 1 tsp. celery salt
  • ¼ tsp. paprika, mustard powder & black pepper
  • Pinch of cinnamon, nutmeg & ginger
  • 1T Let's Do Organic Arrowroot Starch
  • ¼ cup vegan mayo
  • ¾ cup bread crumbs, divided
  • ¼ cup chopped parsley
  • Squeeze of ½ lemon
Lemon Aioli
  • 1/3 cup vegan mayo
  • 1 minced garlic clove
  • squeeze of ½ lemon + zest of whole lemon
  • salt & pepper to taste.
  1. In a large bowl, combine chopped onions, garlic, hearts of palm & artichokes.
  2. Add seasonings, arrowroot, mayo, ¼ cup breadcrumbs, herbs and lemon. Then add the hearts of palm, artichoke hearts, spices, arrowroot and mayo into the bowl.
  3. Divide into 5 cakes & use the remaining breadcrumbs to gently coat cakes and let rest in fridge for 20 mins.
  4. Heat pan on medium-high heat with avocado oil and cook 3-4 mins until golden & warm each side.
  5. Mix all aioli ingredients in bowl & add to your sammy with herbs/greens/tomatoes!
