No-Bake Cookie Dough Bars

If you love all things cookie dough, then you will love these healthier no-bake cookie dough bar that hit the spot every time! They have a no-bake cookie dough that's made with cashew butter, almond flour, oat flour, maple syrup and vanilla. They are layered with a coconut cream chocolate ganache for a healthy yet indulgent treat and easily together with ingredients you probably already have in the pantry!


Cookie Dough Layer:
• 1 cup cashew butter
• 1/2 cup almond flour
• 1/2 cup oat flour (or sub more almond flour)
• 1/4 cup maple syrup
• 2 tsp vanilla extract
• 1/4 tsp salt
• 1/2 cup dark chocolate chips

Chocolate Ganache:
• 1/2 cup dark chocolate chips
• 1/2 cup Native Forest Organic Simple Coconut Cream
• Flaky sea salt, for topping (optional)

Instructions:
In a large bowl, mix cashew butter, almond flour, oat flour, maple syrup, vanilla, and salt until a thick dough forms. Fold in chocolate chips.

Press into a parchment-lined 8x8 pan or loaf pan.

Melt chocolate chips in 30-second intervals, stirring between. Stir in coconut cream until smooth.

Spread ganache over the cookie dough layer. Refrigerate for 1 hour, sprinkle with flaky sea salt, slice, and enjoy.
