No Bake Pumpkin Cheesecake Cups⠀⠀

Makes 4 servings⠀⠀

Ingredients:

1 15 ounce can pumpkin puree

1 8 oz container dairy free cream cheese

1/3 cup maple syrup

1/3 cup melted Native Forest Organic Virgin Coconut Oil

1 tablespoon lemon juice

1/4 teaspoon sea salt

1 teaspoon pumpkin pie spice

1 teaspoon vanilla extract⠀⠀

To serve:⠀

Coconut whipped cream

Chopped pecans⠀⠀
⠀⠀
Instructions

Add all ingredients except whipped cream and pecans to a blender or food processor and process until smooth.

Pour into individual serving cups or one large glass container and refrigerate overnight, or for at least 4 hours, until thick and fluffy.
