Vegan Macaroon Cookies
1/2 cup vegan margarine (buttery spread)
3/4 cup sugar
1/2 tsp vanilla
4 Tbsp ground flaxseed dissolved in 12 Tbsp water (set aside for 5 minutes)
1/2 cup Let's Do...Organic® Coconut Flour, sifted
2 cups Let's Do...Organic® Shredded Coconut
Preheat oven to 375 degrees. Cream the buttery spread, sugar and vanilla. Fold in by hand the flaxseed/water mix. Stir in the flour and shredded coconut. Drop by teaspoonful onto a pre-greased cookie sheet. Bake for 16-20 minutes until golden brown. Remove from cookie sheet and let cool. Store in an airtight container. Makes 24-30 cookies.
