- 3/4 cup dried unsweetened coconut meat (try Let’s Do…Organic® Shredded Coconut)
- 2 Tbsp raw cashew butter
- 1 Tbsp liquid sweetener or stevia
- 1/4 cup hemp seeds
- 1/2 tsp pumpkin pie spice (for topping)
- Blend coconut in food processor until creamy, you might have to scrape down the sides 1 or 2 times. Once consistency is right, add the rest of ingredients except for hemp seeds. Put mixture in a bowl and add hemp seeds, mix by hand.
- Put the mixture in a plastic square container and freeze until firm. Cut and serve. A perfect snack, dessert and portable food!
- As you can see, it will take you less than 10 min to prepare it and less than 1 hr until it is hard enough to take out from the freezer. You can leave it there up to 1 week. But trust me, it won’t last that long!
