Pistachio Chia Pudding

Ingredients

1 cup Native Forest® Organic Simple Coconut Milk
¼ cup shelled pistachios
2 tbsp chia seeds
1–2 tbsp maple syrup (to taste)
½ tsp vanilla extract
Pinch of salt

Optional toppings
• chopped pistachios
• coconut flakes
• fresh berries
• dairy-free yogurt

Instructions

1. Blend the base

In a blender, combine the coconut milk, pistachios, maple syrup, vanilla extract, and salt. Blend until smooth and creamy.

2. Add the chia seeds

Pour the mixture into a jar or bowl and stir in the chia seeds.

3. Let it thicken

Let the pudding sit for about 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 2 hours or overnight until thick and pudding-like.

4. Serve
