Pumpkin Spice Latte Macaroons
These babies are basically a PSL in a crunchy and sweet coconut cookie form! Made with Let's Do Organic Shredded Coconut by @darngoodveggies
These Pumpkin Spice Macaroons are tossed with honey and a heavy pinch of pumpkin spice. Baked until crispy, golden, and crunchy then dunked in a coffee infused chocolate coating.
Ingredients

1 8 oz bag Let's Do Organic Unsweetened Shredded Coconut

6 tablespoons honey OR brown rice syrup

1 tablespoon pumpkin pie spice

1/4 teaspoon salt

5 oz dark chocolate

1 teaspoon instant espresso powder
Directions

Stir together the coconut, honey, pumpkin pie spice, and salt until well combined.

Form into cookies and place on a baking sheet lined with a silicone mat.

Bake at 350 degrees for 12-15 minutes or until the cookies are golden brown.

Once the cookies have cooled, melt the chocolate and stir in the espresso powder.

Dunk the bottom of each cookie in the chocolate and place on a sheet of parchment paper until the chocolate sets.
