
Vegan Apple Crumble

If this doesn't scream fall, we don't know what does: sweet-tart apples, a crisp cinnamon-laced crumble topping, and vegan vanilla ice cream melting into every crevice
Bring this out of the oven and watch the vanilla ice cream melt into pure perfection!
Ingredients
Apple Mixture:

2 lbs (~5-6) apples, peeled and diced or sliced

2 tbsp Let’s Do Organic Cassava Flour

2 tbsp fresh squeezed lemon juice

1/2 cup sugar

1/2 tsp ground cinnamon
Crumble:

1/2 cup Cassava Flour
-
3/4 cup rolled oats
-
1/2 cup brown sugar
-
1/2 tsp ground cinnamon

6 tbsp vegan butter, cubed
Instructions

Mix together the cut apples with the 2 tablespoons cassava flour, lemon juice, sugar and cinnamon. Transfer to a cast iron skillet or casserole dish.

In a mixing bowl combine the cassava flour, rolled oats, brown sugar, and cinnamon. Add the vegan butter and crumble it with your hands until it’s combined and there is little to no dry mixture left behind. Top the apples with the crumble.

Bake at 350 ºF for 45-60 minutes, or until the apples are tender, the juices are thick and bubbly, and the top is crispy and golden. Enjoy warm with vegan vanilla ice cream!
