Sesame Panko Tofu with Mango Chili Sauce

The crispy sesame panko tofu pairs divinely with a delicious homemade chili mango dipping sauce for a seriously addictive dish!
Ingredients:- 1 lb firm tofu block
- 1/2 cup Aquafaba
- 1/2 cup Let's Do Organic Cornstarch
- 3/4 cup Edward & Sons Organic Panko Breadcrumbs
- 1/3 cup sesame seeds
- 2 tsps garlic powder
- 1/2 tsp salt
- 2 tsps sesame oil
- 1 tbsps rice vinegar
- 1/4 cup soy sauce
- 1 tbsp garlic paste
- 1/2 tbsp ginger paste
- 1/2 a lime juiced
- 1 1/2 cups fresh mango puréed
- 1 tbsp date sugar or coconut sugar
- 1 tbsp Olive oil
- 1/2 tsp chili flakes
- 1/2 Tbsp ginger minced
- 1 garlic clove minced
- Start by pressing the access water out of your tofu block and cutting it into 1 inch sized cubes.
- Mix all the marinade ingredients together in a dish big enough for your tofu. Place tofu in mixture, shake and let sit for at least 30 mins.
- Prep your dipping station ingredients and panko mixture. Once time is up, take each piece and coat in the following method. Cornstarch, aquafaba and then the panko mixture.
- Place cubes onto the frying pan and turn to toast each side. About 15 mins.
- Add olive oil, minced garlic, mince ginger and chili flakes to a small pot. Place on the stove top on medium heat. Bring to a boil while stirring for about 3 mins.
- Add your fresh mango to a blender or food processor and blend till smooth. Now mix in your date syrup and your heated chili oil.
- Top your bites with diced chives and green onions and get dipping!
