Strawberry Cassava Oat Bars

Think delicious fruity strawberry jam sandwiched in between a crispy oat crumble. Made with wholesome, natural ingredients!
Made with Let's Do Organic Cassava Flour, the perfect 1:1 flour substitute.
Stuffed between a sweet strawberry jam, these bars are perfect for breakfast or dessert.
Ingredients

3/4 cup Let's Do Organic Cassava Flour

3 cups rolled oats

1/3 cup nut butter
-
1/2 cup coconut oil (melted, then cooled)

1/3 cup honey (sub maple syrup to make vegan)

1/4 cup sea salt

1 Tbsp cold water, if needed⠀
For the filling⠀

1 cup strawberries

1 Tbsp honey⠀

Preheat oven to 350 F

In a food processor, add the Let's Do Organic Cassava Flour, rolled oats, nut butter, coconut oil, honey, and sea salt; pulse until mixture begins to stick together. If the mixture is too dry, add cold water 1 Tbsp at a time while pulsing until it comes together.

Reserve 1 cup of the oat mixture for the top, press the remaining dough into the bottom of a lined 8x8 pan with your hands.

Bake the dough for 10 minutes in the oven.

While the dough is pre-baking, make the filling by heating the strawberries and honey in a skillet over medium-low heat until soft; transfer mixture to a blender and blend until desired consistency.

Spread the strawberry filling over top of the crust, crumple the remaining dough over top and bake for another 15 - 20 minutes until the crumble on top turns a darker color.

Let cool for 10 minutes before cutting into pieces.
