Ingredients

  • 1 cup (240ml) Native Forest® Organic Simple Coconut Milk
  • 1 cup (240ml) almond milk
  • 2 tablespoons (40g) maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup (140g) fresh strawberries, chopped
  • 1 teaspoon matcha powder
  • 1/2 cup plus 2 tablespoons (100g) chia seeds

Instructions

Make the Base

Add the coconut milk, almond milk, maple syrup or honey, vanilla extract, and salt to a blender. Blend until smooth.

Make the Matcha Layer

Pour 1 cup of the blended milk mixture into a bowl. Whisk in the matcha powder until fully dissolved, then stir in 1/4 cup of the chia seeds.

Divide the mixture evenly between two shallow jars or containers.

Make the Strawberry Layer

Add the chopped strawberries to the remaining milk mixture in the blender and blend until smooth.

Add the remaining 1/4 cup plus 2 tablespoons of chia seeds and pulse a few times until evenly combined.

Carefully pour the strawberry mixture over the matcha layer.

Chill

Cover and refrigerate overnight, or for at least 6 hours, until both layers are thick and set.

Serve

Top with fresh strawberries, granola, coconut flakes, sliced almonds, or your favorite toppings before serving.
