Delish and healthy pancake breakfast that's both gluten-free and refined sugar-free!
Healthy Vegan Chocolate Chip Cassava Pancakes (vegan,gluten-free, refined sugar-free)⠀ ⠀ Ingredients

½ cup Let's Do Organic Cassava Flour

3 tbsp almond flour
-
2 tbsp flaxseed meal
-
6 tbsp water
-
1 tsp baking powder
-
1 tsp baking soda
-
1 ½ tbsp Native Forest Virgin Coconut Oil

¼ cup maple syrup
-
¾ cup unsweetened cashew milk (or any other plant-based milk of choice)

⅓ cup vegan chocolate chips

½ tsp cinnamon
-
¼ tsp cardamom⠀
⠀ Instructions

First, make the flaxseed eggs. Combine 2 tbsp of flaxseed meal with 6 tbsp water. Mix⠀
them together and let them sit for 5 minutes to thicken.

Meanwhile, combine the cassava and almond flours, baking powder, baking soda,⠀
cinnamon, and cardamom together in a large bowl.

In a separate bowl, combine the milk, coconut oil, and flaxseed eggs together. Slowly⠀
add in the flour mixture and mix well. Make sure no lumps are visible. Fold in the⠀
chocolate chips. Let the batter sit for 5 minutes.

Heat a pan over medium heat and spray with some oil. Pour about ¼ cup of the batter⠀
into the pan. Let it cook for 1-2 minutes then flip the pancake over and cook for another⠀
minute. Repeat the step until all pancake batter is used.

Top the pancakes with anything you want or serve as is with maple syrup. Enjoy!
