Vegan Chocolate Covered Strawberry Coconut Bars

This recipe is basically a strawberry coconut-ty mounds bar!
It's creamy, berry sweet and delicious! Perfect for Valentine's Day, Mother's Day, or a just a sweet treat for any occasion!
The filling is made with Let's Do Organic Shredded Coconut and Native Forest Organic Simple Coconut Milk.
This recipe is relatively easy to make, and involves no baking!In a food processor, blend the strawberries, freeze dried strawberries, coconut cream, coconut oil, maple syrup, and salt. Then add the unsweetened shredded coconut.
Next, you'll press the mixture into a loaf pan and freeze for 30 mins. Carefully lift out of the pan and slice into bars.
Coat in melted dark chocolate, sprinkle with more freeze dried strawberries, chill until chocolate is set.

- 2 cups (140g) Let's Do Organic Organic Unsweetened Shredded Coconut
- 3/4 cup (100g or 4-5) fresh strawberries
- 3/4 cup (15g) freeze dried strawberries
- 2 tbsp (25g) Native Forest Organic Virgin Coconut Oil
- 1/4 cup (60g) coconut cream (solid part from a can of Native Forest Organic Simple Coconut Milk refrigerated at least 24 hours)
- 2 tbsp (40g) maple syrup
- Pinch of salt
- 1 cup (180g) dark chocolate chips, melted
Instructions
- In a food processor, blend the strawberries, freeze dried strawberries, coconut cream, coconut oil, maple syrup, and salt.
- Add the unsweetened shredded coconut. Blend to combine.
- Press into a lined loaf pan. Freeze at least 30 minutes.
- Carefully lift out of the pan and slice into 8 bars.
- Coat in melted dark chocolate, sprinkle with more freeze dried strawberries, chill until chocolate is set.
