Vegan Cookie Dough Ice Cream Cones
Made with Let's Do Gluten Free Sugar Cones, Let's Do Organic Coconut Flour and Native Forest Organic Virgin Coconut Oil!
No-bake cookie dough stuffed into a gluten-free sugar cone for the ultimate summer treat! No melting of ice cream here folks!
The cookie dough comes together with healthy ingredients including almond flour, coconut flour, coconut oil, coconut sugar and more.
Of course this treat wouldn't be complete without Let's Do Gluten Free Sugar Cones!
This treat is super easy to whip together and enjoy!
Serves: 2 Ingredients:- 1 cup blanched almond flour
- 2 tbsp Let's Do Organic Coconut Flour
- 2 tbsp coconut sugar
- 1/4 tsp fine sea salt
- 3 tbsp Native Forest Organic Virgin Coconut Oil (melted)
- 1/2 tsp vanilla extract
- 3 tbsp dairy-free milk (we used almond milk)
- 1-2 tbsp date syrup or maple syrup
- 1/2 cup vegan chocolate chips
- Let's Do Gluten Free Sugar Cones
- In a medium bowl, combine the dry ingredients: almond flour, coconut flour, coconut sugar and salt. Whisk until combined.
- Next add in the wet ingredients, melted coconut oil, vanilla extract, almond milk, and date syrup.
- Use a silicone spatula or hand mixer to form a dough ball.
- Fold in the chocolate chips and create a ball of dough.
- Freeze for 10-15 minutes.
- Remove from freezer and use an ice cream scoop to scoop the cookie dough onto the cone. Enjoy!
