Vegan French Toast

Layered with a generous assortment of berries, maple syrup and powdered sugar!
Traditional french toast contains eggs, but this vegan french toast is made with chickpea flour and cashewmilk powder as the "egg".
The key to french toast is using stale bread, who would have guessed!
The process of making is fairly easy, you will take the stale bread and dunk it in the batter and then fry it up until golden and crispy!

Vegan French Toast (4-6 servings) Ingredients: 1 stale loaf of bread ¼ cup chickpea flour 3 tbsp Native Forest Cashewmilk Powder 1 tsp ground cinnamon 1/4 tsp ground nutmeg 1/8 tsp salt 1 cup plant milk 1 tbsp maple syrup 1 tsp vanilla extract Vegan butter or oil to cook Instrcutions: 1. Slice the bread into about ¾-inch thick slices. If the bread is not yet stale leave the slices out for several hours to dry them out. 2. In a small mixing bowl whisk together the chickpea flour, Cashewmilk Powder, cinnamon, nutmeg, and salt. Add the plant milk, maple syrup, and vanilla extract and whisk to make a smooth batter. Pour the batter into a shallow dish. 3. Preheat a skillet or griddle on the stove over medium-low heat and coat with a thin layer of vegan butter or oil. Soak the bread for at least 30 seconds on each side so it soaks up batter, then let excess batter drip off before placing on the pan. Cook the French toast in batches for 2-3 minutes on each side, or until golden. 5. Serve the French toast warm with maple syrup and fresh fruit.
