Vegan Gingerbread Cake Bars
Made with Native Forest Organic Simple Coconut Milk and Let's Do Organic Cornstarch by @sunnyrecipes
These vegan gingerbread cake bars are incredibly moist and soft with gingerbread spice flavor and topped with delicious coconut cream icing!
Ingredients:dry ingredients:
- 1 cup oat flour
- 1 cup flour (use gluten-free all purpose flour if gf)
- 1 tbsp ginger
- 1 tsp cinnamon, nutmeg, allspice
- 1 tbsp Letās Do Organic cornstarch
- 1 tsp baking powder & baking soda
wet ingredients:
- 1/2 cup applesauce
- 1/4 cup melted coconut oil
- 2 tbsp molasses
- 1/3 cup brown sugar
- 1/2 tbsp vanilla extract
- 3/4 cup milk (we used almond milk)
frosting:
- 1/3 cup Native Forest Organic Simple Coconut Milk (refrigerate can overnight and scoop the cream off the top)
- 1/3 cup powdered sugar
- 1-2 tbsp milk
Directions:
- preheat oven to 350F
- mix all the dry ingredients together
- mix in the wet ingredients
- stir until it forms a smooth consistency
- bake for 50-55 min
- in the meantime make the frosting
- enjoy!!
