
Vegan Hearts of Palm Ceviche
This vegan ceviche is an easy recipe to make when you want something that feels light but still satisfying. The crisp vegetables, creamy avocado, tender hearts of palm, tart lime, tropical pineapple, and creamy coconut milk make every bite a little different. Plus, there's no cooking required. Chop, mix, chill, and grab the tortilla chips!

Ingredients
- 2 cans Native Forest Organic Hearts of Palm, drained and chopped into 1/2-inch pieces
- 1/2 English cucumber, small diced
- 1 firm avocado, small diced
- 1/2 cup thinly sliced red onion
- 2 jalapeños, seeds removed and finely minced
- 1/4 cup finely chopped cilantro
- 1 can Native Forest Organic Simple Coconut Milk
- 3/4 cup fresh lime juice
- 1/2 cup pineapple juice, or substitute orange juice
- Salt, to taste
- Tortilla chips, for serving
Instructions
Drain the hearts of palm and chop them into approximately 1/2-inch pieces.
Add the hearts of palm, cucumber, avocado, red onion, jalapeños, and cilantro to a large bowl.
Pour in the coconut milk, lime juice, and pineapple juice. Season with salt to taste, then gently mix everything together until well combined.
Cover and refrigerate for at least 15 minutes before serving. This gives the flavors time to come together and allows the hearts of palm and vegetables to soak up the citrusy marinade.
Serve chilled with tortilla chips, or enjoy it on its own as a refreshing summer snack.
