To begin, our miso craftsmen age certified organic soybeans with rice "koji", which is organic rice made "active" by a traditional starter culture. Sea salt regulates this aging process, which, in time, yields rich and flavorful organic miso. Onion, yeast, mushroom and seaweed extracts tastefully enhance complex miso flavors, while a tiny amount of alcohol naturally protects shelf life. We present this Miso-Cup® to you in our new Soft-Pack, designed to offer you on-the-go convenience while retaining the incomparable taste of fresh miso soup.
