Blueberry Ice Cream Bars

These Blueberry Ice Cream Bars are the perfect homemade treat for hot summer days! Made with a creamy dairy-free coconut ice cream, a sweet homemade blueberry filling, and a crunchy white chocolate shell, every bite is creamy, fruity, and delicious.

The secret to the rich and creamy texture is Let’s Do Organic Heavy Coconut Cream. Paired with soaked cashews, maple syrup, and vanilla, it creates an easy dairy-free ice cream base that’s perfect for layering with the blueberry compote.

Blueberry Ice Cream Bars

Ice Cream

  • 3/4 cup (155g) Let’s Do Organic Heavy Coconut Cream*
  • 3/4 cup (100g) cashews*
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract or vanilla bean paste
  • Pinch of salt

Blueberry Filling

  • 300g blueberries, fresh or frozen
  • 1/4 cup sugar
  • Juice of 1/2 lemon
  • 1 teaspoon vanilla
  • Pinch of salt
  • 1 tablespoon cornstarch

Chocolate Shell

  • 1 cup vegan white chocolate
  • 1–2 teaspoons coconut oil
  • Chopped almonds

Refrigerate the coconut cream overnight, then scoop out and measure the solid cream that forms on top. Soak the cashews in boiling water for 30 minutes before blending for the smoothest texture.

Directions

Blend the coconut cream, soaked cashews, maple syrup, vanilla, and salt until completely smooth. Transfer to the refrigerator while you prepare the blueberry filling.

Add the blueberries, sugar, lemon juice, vanilla, and salt to a saucepan. Cook over medium heat for 5–10 minutes, gently pressing the blueberries as they soften. Whisk in the cornstarch and cook for another 1–2 minutes, or until thickened. Remove from the heat and allow to cool completely.

Add popsicle sticks to your ice cream molds. Spoon a little of the ice cream mixture into each mold, spreading it along the sides. Add a generous spoonful of blueberry filling, then cover completely with more ice cream mixture. Freeze until completely solid.

Once frozen, melt the vegan white chocolate with the coconut oil until smooth. Stir in the chopped almonds, then dip each frozen bar into the chocolate mixture until coated. Allow the shell to set and enjoy!
