
Dairy-Free S'mores Ice Box Cake
When you’re craving s’mores but don’t have a campfire, this S’mores Icebox Cake is the answer! It has all the classic s’mores flavors layered into an easy, no-bake dessert that’s perfect for summer.

Layers of gluten-free graham crackers, fluffy marshmallow filling, and silky chocolate ganache come together for a creamy, chocolatey cake with no oven required. The secret to the rich chocolate ganache is Let’s Do Organic Heavy Coconut Cream, which gives it an extra-smooth, creamy texture while keeping the recipe completely dairy-free.

Make it the night before, let the graham crackers soften in the fridge, and you’ll have the easiest slice-and-serve summer dessert!

S’mores Icebox Cake
Ingredients
- 12 oz semi-sweet chocolate chips
- 1 cup (240ml) Let’s Do Organic Heavy Coconut Cream
- 9 oz dairy-free whipped topping
- 7 oz vegan marshmallow fluff
- 36 gluten-free graham crackers
- Shaved chocolate, for topping
- Crushed graham crackers, for topping
Directions
Add the chocolate chips and Let’s Do Organic Heavy Coconut Cream to a microwave-safe bowl. Microwave for 60 seconds, then stir until the chocolate is completely melted and the ganache is smooth and silky.
In a separate bowl, gently fold together the dairy-free whipped topping and vegan marshmallow fluff until smooth. If needed, whisk briefly to remove any remaining lumps.
Refrigerate both mixtures for 30–60 minutes to thicken.
Line an 8x8-inch pan with a parchment paper sling. Start with a thin layer of the marshmallow mixture, then layer the graham crackers, marshmallow mixture, graham crackers, chocolate ganache, graham crackers, marshmallow mixture, graham crackers, chocolate ganache, graham crackers, and a final layer of marshmallow mixture. Aim for marshmallow layers about ½-inch thick, and break the graham crackers as needed to fit the pan.
Top with shaved chocolate and crushed graham crackers, then refrigerate overnight. This gives the graham crackers time to soften and all those delicious s’mores layers time to set.
When you’re ready to serve, slice and enjoy! Store any leftovers covered in the refrigerator for up to one week.
