Dairy-Free Snickers Bars

Homemade Snickers

A healthier homemade version of a classic snicker. A nutty nougat base with a gooey caramel layer and roasted peanuts all covered with a rich chocolate. These bars are so delicious and easy to make! 

Made with Let's Do Organic Sweetened Condensed Coconut Milk and Native Forest Organic Premium Coconut Cream.

Makes 12 bars

Ingredients:
Base:
3/4 cup almond or other nut butter, room temp
2 Tbsp Let’s Do Organic Sweetened Condensed Coconut Milk
5 Tbsp coconut oil
1 cup almond flour
3 tsp vanilla extract
Caramel:
15-20 medjool dates, pitted and soaked
1/2 cup Native Forest Organic Premium Coconut Cream
1/2 tsp salt
1 tsp vanilla extract
1 cup smooth peanut butter, room temp
1 1/4 cup dry roasted peanuts
16 oz vegan chocolate, tempered and melted

Instructions:
Parchment line a 7x7 baking pan, leaving a parchment overhang for easier removal.
In a bowl, add all base ingredients and mix to combine. Add to baking pan and smooth out
evenly. Freeze for 20 minutes.
Meanwhile, make caramel. Add dates, coconut cream, salt, and vanilla extract to a food
processor. Blitz until smooth. Add peanut butter then blitz until smooth again.
Remove pan from freezer and add caramel layer, smoothing out evenly. Add roasted peanuts
on top and gently press them down into caramel.
Wrap and freeze overnight or for at least four hours.
Carefully lift snickers out of pan. Cut in half. Then cut each half into 1” bars. Coat each bar
completely in melted chocolate.
Place on a cooling rack lined with parchment. Serve once chocolate is set.
