For Hot & Sour Bouillon Cubes
Vegan Hot & Sour Soup (Serves 6-8)
Ingredients:- 4 Edward & Sons® Hot & Sour cubes dissolved in 8 cups hot water
- 1 can Native Forest® Organic Water Chestnuts (drained, rinsed & halved)
- 1/2 can Native Forest® Organic Bamboo Shoots (drained & rinsed)
- 2 Green onions, sliced
- 1 Tbsp Grated ginger
- 1 cup Fresh mushrooms, sliced
- 1 Tbsp Soy sauce/tamari
- 1/2 Tbsp Sesame oil
- 1/4 cup Rice vinegar
- 5 Tbsp Let’s Do Organic® Cornstarch
- 5 Tbsp Water (for cornstarch slurry)
- 1 14oz Extra firm tofu (350g)
- In a large saucepan, add broth, ginger and green onions over medium heat.
- Add mushrooms, tofu, water chestnuts, bamboo shoots and soy sauce.
- When boiling, reduce heat to low and simmer for 8-10 minutes.
- In a separate bowl, mix cornstarch and water to make a slurry with no lumps.
- Slowly pour cornstarch slurry into pan while stirring. Continue to stir to thicken (1-2 minutes).
- Remove pot from stove, add vinegar and oil. Salt and pepper to taste.
- Serve and enjoy.
