Vegetable Pilaf

For Low Sodium Veggie Bouillon Cubes

Vegetable Pilaf (Serves 4)

Ingredients:

  • 1 Low Sodium Veggie cube dissolved in 2 ¾ cups hot water
  • 1 cup Brown rice
  • 1/3 cup Chickpeas, cooked
  • 1/2 cup Carrots, chopped
Instructions:
  1. Add prepared broth and all ingredients in a saucepan.
  2. Bring to a boil. Reduce heat, cover and simmer 45 - 60 minutes.
  3. Stir and serve hot.
  4. Options: Add other chopped veggies of choice—onions, mushrooms, green peas, broccoli.....
