Mini Vegan Berry Crumble

If there is one recipe that screams summer, it's a berry crumble!
This version is made with healthier ingredients, it's vegan, gluten-free, and the perfect treat for any summer festivities!
This recipe can be made with your favorite fruit or whatever you have on hand!
The key to making the best ooey gooey berry filling is Let's Do Organic Cornstarch, so don't leave this out!

Vegan Berry Crumble for Two Crust Ingredients- 1/4 cup almond flour (24 grams)
- 1/3 cup oats (30 grams)
- 1/4 tsp baking powder
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- dash of vanilla & salt
- 1 1/2 cup berries (150 grams)
- 1/4 lemon (juice and zest)
- 2 1/2 tbsp coconut sugar
- 1 1/2 tbsp Let's Do Organic Cornstarch
- dash of vanilla & salt
- In a bowl, combine all of the crust ingredients and mix them well.
- In a separate bowl, combine the filling ingredients.
- Transfer the filling ingredients to a pan and cook the berries over medium heat for 4-5 minutes, until they start to soften and release their juices, and the mixture starts to thicken.
- Grab two small oven safe ramekins and split the berry mixture evenly between the two.
- Top them with the crumble.
- Bake the crumble in the oven for 15-20 minutes at 400*F/ 200*C, until the crust becomes golden in color.
- Once the crumble has baked, let them cool for a few minutes, top with dairy-free vanilla ice cream and enjoy!
- This recipe makes two servings. Feel free to double or triple the recipe to enjoy with more friends!
