Papaya Blood Orange Chia Pudding

This sweet delicious nutritious chia pudding has aromatic notes of papaya that pairs perfectly with juicy winter citrus.

Papaya Blood Orange Chia Seed Pudding ⠀⠀ ⠀⠀ Makes about 4 servings⠀⠀ ⠀⠀ Ingredients:⠀⠀ ⠀⠀ For the pudding:⠀⠀

1 14 ounce can Native Forest Organic Papaya Chunks, drained

1 - 1 1/2 cups non dairy milk (less for a thicker chia seed pudding)

juice of 2 small blood oranges

1/4 teaspoon sea salt

2 tablespoons maple syrup, or to taste

1/2 cup chia seeds ⠀⠀
To garnish:

blood orange slices
-
pistachios ⠀⠀
Instructions:⠀

Combine drained papaya, non dairy milk of choice, blood orange juice, sea salt, and maple syrup in a blender and blend until smooth.

Whisk together with chia seeds in a glass tupperware until thoroughly combined.

Let sit for about 10 minutes, whisk together again (to avoid and clumps!) and move to the refrigerator.

Allow the chia seeds to absorb the liquid for at least several hours, or up to overnight.

Serve with blood orange slices and pistachios and ENJOY!
