- Peel potatoes and soak in salted water for 5 minutes.
- Boil potatoes about 15 minutes and drain.
- Mash well and add mixed vegetables, salt and pepper.
- Make about 1 1/2 oz. balls and cool.
- Dissolve 1/4 cup flour with water.
- Dredge the balls in the remaining flour and then dip in the dissolved flour.
- Pour the panko onto a plate and roll the balls in it.
- Heat oil to 350º and deep fry balls until golden brown.
- Serve with soy sauce or other sauce of choice.

½ oz Frozen mixed vegetables (or corn or peas only)
1 cup Edward & Sons Organic Panko Breadcrumbs
1¼ cups Unbleached flour
½ cup Water
2 cups Vegetable oil
Salt and pepper to taste
