Pumpkin Cinnamon Roll Bites

Think soft pumpkin spice dough coated in cinnamon sugar, baked until warm and gooey, then finished with a sweet vanilla glaze. And the best part? There’s no yeast, no rising, and no rolling out dough required.

A splash of Native Forest Organic Simple Coconut Milk poured over the dough before baking creates extra gooey, caramel-y bottoms that might just be the best part. They’re vegan, gluten-free, and ready in about 30 minutes, making them an easy fall breakfast, brunch, or dessert.

Pumpkin Dough

  • 1 1/4 cups (175g) gluten-free flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon pumpkin pie spice

  • 1/3 cup (80g) pumpkin puree

  • 1 flax egg (1 tablespoon ground flaxseed + 2 tablespoons warm water)

  • 1/3 cup (75ml) Native Forest Organic Simple Coconut Milk

  • 1 tablespoon melted dairy-free butter or coconut oil

  • 1 teaspoon vanilla extract

Pumpkin Spice Sugar Coating

Vanilla Glaze

Instructions:

Preheat your oven to 375°F and grease a mini 6.5 x 5-inch casserole dish or an 8 x 4-inch loaf pan.

In a mixing bowl, whisk together the gluten-free flour, baking powder, salt, and pumpkin pie spice.

Add the pumpkin puree, prepared flax egg, Native Forest Organic Simple Coconut Milk, melted dairy-free butter, and vanilla. Mix until a soft, smooth dough forms.

Divide the dough into 12 equal portions and gently roll each portion into a ball.

In a small bowl, mix together the cane sugar and pumpkin pie spice. Dip each dough ball into the melted dairy-free butter, then roll it in the pumpkin spice sugar until completely coated.

Arrange the coated dough balls in your prepared baking dish.

For extra gooey, caramel-y bottoms, pour 1/4 cup Native Forest Organic Simple Coconut Milk evenly over the dough balls before baking. This step is optional, but highly recommended!

Bake for 18–22 minutes, or until the bites are baked through and golden around the edges.

While they bake, whisk together the powdered sugar, Native Forest Organic Simple Coconut Milk, and vanilla until you have a smooth, pourable glaze.

Allow the cinnamon roll bites to cool for about 5 minutes, then drizzle generously with vanilla glaze.
