Pumpkin Pie Chia Pudding

If you want to eat pumpkin pie for breakfast, this Pumpkin Pie Chia Pudding is the next best thing. It’s thick, creamy and full of cozy pumpkin pie flavor, while still being a light, protein-packed breakfast or snack.

Made with pumpkin purée, yogurt, chia seeds, maple syrup and Native Forest Organic Simple Coconut Milk, this easy chia pudding takes just a few minutes to mix together. Prep it the night before for an easy fall breakfast that’s ready to grab straight from the fridge.

Ingredients:

  • 2 cups pumpkin purée
  • 1 cup yogurt of choice
  • 1/2 cup Native Forest Organic Simple Coconut Milk
  • 1/4 cup maple syrup
  • 1/3 cup chia seeds
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 scoop vanilla protein powder

Instructions:

Add all of the ingredients to a bowl and mix until everything is well combined. Cover and refrigerate overnight, or for at least 1 hour, until the chia pudding is thick and creamy.

When you’re ready to eat, give it a quick stir and top with yogurt or whipped cream and crushed graham crackers or granola.
