Raspberry Coconut Bars
There is no better treat than these decadent yet healthy raspberry coconut bars! They are full of raspberry flavor, made with simple, nutritious ingredients and minimal prep time.
These bars come together with frozen raspberries, maple syrup, chocolate and Let’s Do Organic Unsweetened Shredded Coconut by @veggieworldrecipes.
Ingredients
2 cups raspberries (we used frozen)
2 cups Let’s Do Organic Unsweetened Shredded Coconut (175g)
4 tbsp maple syrup
dash of vanilla
pinch of salt
1 cup dark chocolate chips
✨Directions
To a food processor, add the raspberries, coconut, maple, vanilla, and salt. Pulse until everything is well combined.
Transfer the mixture to a parchment-lined loaf pan and flatten out the top. Freeze for 4-5 hours, until it’s frozen solid.
Remove the bars from the loaf pan and slice into bars.
Melt the dark chocolate, then dunk each bar fully into the chocolate and place on a parchment-lined plate.
Drizzle the remaining chocolate on top and top with crushed-up raspberries, if you wish.
Freeze until the chocolate hardens, then enjoy!
Store the bars in the freezer, especially if you use frozen raspberries to make these.
