Healthy Oatmeal Yogurt Cups

INGREDIENTS:
Oatmeal Cups:
-2 overripe bananas, mashed (about 3/4 cup mashed)
-1 1/2 cups rolled oats
-1/4 cup pure maple syrup
-2 tbsp coconut oil, melted
-1 tsp ground cinnamon
-1/4 tsp salt
Toppings:
-1 cup non-dairy yogurt (we used coconut yogurt and raspberry coconut yogurt)
-strawberries
-blueberries
-Let’s Do Organic Unsweetened Coconut Flakes
-cacao nibs
Instructions:
Preheat the oven to 350°F. Spray the insides of a muffin pan with cooking spray or brush with melted coconut oil. If using a silicone muffin pan, you can skip this step.
In a medium mixing bowl, add the mashed bananas, oats, maple syrup, melted coconut oil, cinnamon, and salt. Stir until well combined.
Add the oat mixture to the muffin pan, using about 1/4 cup per well. Use a spoon to press the mixture into the bottom and sides, creating a cup shape.
Bake for 30 minutes or until lightly golden brown. Let cool for about 5 minutes before removing from the pan to cool completely on a wire rack.
Fill each oatmeal cup with yogurt, and top with berries, coconut flakes, and cacao nibs. Enjoy!
Store in an airtight container in the fridge for up to 3-4 days. For the best texture, leave the yogurt and toppings out and add just before serving.
