Vegan Copycat Cosmic Brownies
These rich brownies have all the decadence of your childhood! A rich and fudgy chocolate brownie base topped with a creamy layer of ganache and finished off with colorful sprinkles!

Vegan Copycat Cosmic Brownies Ingredients:

1 9” square pan

¾ cup plant milk (use 2/3 cup for chewier brownie)

1 tsp apple cider vinegar

1 cup sugar
-
2oz 65-75% dark chocolate
-
¼ cup oil
-
1 ½ tsp vanilla extract
-
1 cup flour
-
½ cup dutch processed cocoa
-
1 tbsp Let’s Do Organic Cornstarch
-
½ tsp baking powder
-
½ tsp salt
Ganache Ingredients:

1 ½ cups vegan chocolate chips

½ cup Let’s Do Organic Heavy Coconut Cream (or sub the cream from regular full fat coconut milk)
Instructions:

Add plant milk and vinegar together and set aside to curdle for 5-10 minutes.

Add sugar, chocolate, oil, and vanilla extract and mix to combine. Microwave in 30 second increments, whisking between each time, until chocolate is melted and sugar dissolved.

In second mixing bowl whisk together the flour, cocoa, cornstarch, baking powder, and salt. Add to wet ingredients and whisk until smooth.

Pour into a greased 9” pan lined with parchment paper. Bake at 350 ºF for 17-20 minutes or until a tester comes out with a few crumbs but batter is no longer wet. Set aside to cool in pan.

To make ganache: Add chocolate chips and heavy coconut cream in heat safe bowl. Microwave in 15 second increments, whisking between each one, until chocolate is melted. Let cool for a few minutes then pour over cooled brownies.

Top with sprinkles. Refrigerate until ganache is set before cutting and serving!
