Ingredients⠀

2/3 cup Let's Do Organic Coconut Flour

2 cups oat flour

2/3 cup tapioca flour (plus more for rolling out dough)

2 tsp baking soda

1/3 cup vegan butter (cold, cut into cubes)

1/4 cup coconut sugar
-
1 flax egg (1 Tbsp ground flax meal + 2 Tbsp water)

2/3 cup Native Forest Lite Coconut Milk

1 tsp vanilla
-
1 Tbsp orange zest
-
2 Tbsp orange juice
-
1/3 cup coconut butter (melted)⠀
Directions

Preheat oven to 400 F. In a bowl, mix together the coconut flour, oat flour, tapioca flour, and baking soda; set aside.

In a separate bowl, beat the vegan butter, coconut sugar, flax egg, coconut milk, orange zest, and orange juice until well combined.

Slowly fold in the flour mixture into the bowl with the coconut milk until a large ball of dough begins to form.

Transfer dough to a lightly floured surface, knead a few times, then form into a large circular disk.

Cut the dough into 16 triangles by slicing vertically and horizontally, then 2 more diagonal cuts.

Carefully pull the triangles about 2 inches apart on parchment paper and bake for 10 - 14 minutes until the edges turn golden brown.

Drizzle with melted coconut butter and top with extra orange zest if desired.
