- Preheat oven to 375ºF.
- Cream together the butter, sugar, vanilla and eggs.
- Mix the flour and baking soda into the creamed mixture.
- Stir in the oats, coconut and walnuts.
- Drop on cookie sheet.
- Bake for 8 minutes.

3 X-large eggs or egg substitute
2 cups Unbleached flour
2 tsps Baking soda
2 cups Rolled oats
2 cups Let’s Do…Organic® Shredded Coconut
1 cup Walnuts, chopped
