Low-Sodium Tortilla Soup

For Low Sodium Not Chick'n Bouillon Cubes

Tortilla Soup (Serves 4)

  • 2 Tbsp Vegetable oil
  • 1/2 Onion, white or yellow, diced
  • 3 Garlic cloves, minced
  • 1/2 Red or green pepper, diced
  • 1 tsp Chili powder or flakes
  • 1 1/2 cups Salsa (heat level your choice)
  • 2 cubes Low Sodium Not Chick’n™ cubes dissolved in 4 cups hot water
  • 2 cans Black beans (15oz), drained
  • 15 oz Whole kernel corn, drained
  1. Heat oil in saucepan. Add garlic, onion and pepper.
  2. Stir and cook over medium heat for 4-5 minutes, stirring frequently, until onions are translucent.
  3. Add chili and stir to coat. Add salsa and vegetable broth, stir to combine and bring to a low boil.
  4. Stir in black beans and corn.
  5. Cover, reduce heat to low and simmer for about 30 minutes, stirring occasionally.
  6. Serve as is or: with a squeeze of lime juice, chopped fresh cilantro, diced red onion, cubed ripe avocado, sprinkle tortilla chips/strips on top.
